“Yukimuro Yuraka” (Snow Aging Soy Sauce)
In Niigata prefecture where many snow falls, there is a culture to use
snow as natural refrigeator to mature foods. “Yuraka” is the soy sauce
with mild taste bottled after carefully made soy sauce is marured in
“Kyoudo no Minori”(Harvest of the region)
This soy sauce is made whth local people using wheat and soy from japan’s
granary,Niigata prefecture,and Japan made salt.There are many people who

“Tobiuo no shirodashi”(Shirodashi of flying fish)
The “Dashi” from flying fish is popular among the Sea of Japan’s coastal areas.
We have locked the flavor of its “Dashi” into the liquid. Japan’s deliciousness
can easily be recreated by mixing with water.
