In recent years, in order to spread the Japanese “Dashi”(soup stock)culture,
we have used the delicious flavor of “flying fish”. This taste, which is familiar in the
Sea of Japan region, is used to create “Shirodashi”. It has been receiving hige marks
amongst Japanese consumers and spreading the flavor of the Sea of Japan.

provides one of the best grain crops in Japan,since heavy snowfall imparts rich soil.

“Yukimuro Yuraka” (Snow Aging Soy Sauce)
In Niigata prefecture, where deep snow falls, there is a culture of using
snow as a natural refrigeator to mature foods. “Yuraka” is a mild tasting
soy sauce which is a carefully made and was bottled after maturing in
a snow cavern.
“Kyoudo no Minori”(Harvest of the region)
This soy sauce is made by the manufacture and local people using the wheat
and soybeans of Niigata prefecture,and Japanese salt. There are many local
people who look forward to making soy sauce every year.
“Tobiuo no shirodashi”(Shirodashi of flying fish)
The “Dashi” (soup stock)from flying fish is popular amongst costal areas of
Japan. We have manufactured this flavor of flying fish “Dashi” to sell to the
rest of Japan. Delicious local flavor can be easily re-created by mixing the
soup with water.
